[Cinnamomum burmannii]

This cassia cinnamon offers an aromatically rich, sweet warmth, with a bold comforting finish. Sweet orange tones, subtly spicy, and earthy. Perfect for baking or adding depth to savoury dishes. Used in dishes like apple pie, cinnamon scrolls, stews, and curries. It can also be used in tea blends, and often paired with Pandan leaf in Indonesia.

Harvested and dried using traditional methods to preserve its natural oils and enhance the flavour profile.

Our cinnamon is grown on ancestral lands beneath the towering Kenari trees on the Banda Islands, and is more than a kitchen staple, it is the result of generations of careful, chemical-free cultivation. Each harvest is hand-cut, and hand-rolled into quills. This is a spice that carries the warmth and integrity of our community in every curl. When you cook with our cinnamon, you honour the soil it was grown in and the hands that nurtured it.
