Lesser known, mace blades are delicately potent. Offering sweet, warm spice with floral and citrus undertones. Slightly sweeter, and more fragrant than nutmeg, but with a warm bouquet and a hint of bitterness. Great for use in pickling, desserts, baking, infusions, and savoury dishes for extra depth. Sun-dried to preserve essential oils and colour. 

Like a hidden thread of fire around the nutmeg seed, this aril is carefully removed and dried to preserve its deep red tones and fragrant perfume. This aromatic veil is often overlooked, but in Banda it is known to be a treasure. Our mace is harvested from our heirloom trees, collected with care and dried by village hands, offering chefs and cooks a spice that speaks of warmth, patience, and respect.
